Granite inner surface of the pan

The granite inner surface of the pan is not actually made of stone. It is a marketing term for a multi-layered non-stick surface that resembles granite in its mottled or marbled appearance. The base of this surface is usually a non-stick material, for example PTFE-based, which is reinforced by the addition of hard mineral or ceramic particles. These particles increase the mechanical and abrasion resistance of the surface, making it less susceptible to scratching than some basic non-stick coatings. The main function is to prevent food from burning, which allows food to be prepared with a minimum of fat and makes subsequent cleaning easier. To maintain the durability of the surface, it is advisable to use gentle cooking utensils, such as wood or silicone, and to avoid rapid changes in temperature. Most of these surfaces are manufactured without the use of PFOA, a perfluorooctanoic acid previously used in the manufacture of non-stick materials.
