Cocoa beans come from the tropical region of South America, where they were probably grown as early as the 5th century AD. The Aztecs used them as currency and their Latin name Theobroma cacao means “food of the gods“. They are harvested twice a year and, after harvesting, are cracked by hand and subsequently fermented. By fermentation, their biological changes take place, the bitter taste is reduced and a reddish-brown colour is formed. Then the beans are dried and roasted and slowly acquire a chocolate colour and aroma. Even in a modern kitchen, they are a popular ingredient and it' s no wonder. They belong to superfoods and are literally loaded with healthy substances.
Cocoa beans are a source of quality carbohydrates, proteins and fats. They even make up 85% of them. You will also find a number of vitamins in them, for example B6, B12, TO, riboflavin, thiamin, niacin and pantothenic acid. Minerals are selenium, copper, manganese, zinc, calcium, magnesium, iron, potassium and phosphorus. In addition, they also have a significant proportion of caffeine and theobromine, which are substances that are among the stimulants as well as guarana or ginseng. Especially people who are more sensitive to stimulants should consume cocoa beans with caution.
Cocoa beans have been used in kitchens since ancient times. Due to their distinctive chocolate taste, they are suitable, for example, for enriching chocolate, sweet creams and fillings or as a decoration for desserts. You can enjoy them anyway. The recommended daily dose is 15-20 g.
