What is the difference between a standard, steam, added steam, and combi steam oven?
An added steam oven is a classic oven that releases pulses of steam during baking, keeping food juicy inside and crispy outside. A combi steam oven has a full steam generator, letting you cook with pure steam or combine steam with hot air. The term "steam oven" is often used for appliances that cook only with steam and have no conventional heating element.

Dimensions of the oven interior/trays?

I don't see any steam inside the steam oven.
That's completely normal. At high temperatures, steam is invisible since it's a colorless gas. It only becomes visible as mist once it cools down, for example when the door is opened.

Why is air blowing between the door and the control panel?
That's the cooling fan at work. Its job is to cool the electronics and the space between the door's glass panes, keeping the control panel from overheating and protecting nearby furniture from heat damage.
