Select Arabica from northern Rwanda which, thanks to honey processing and slow drying, offers a clean, sweet and beautifully layered cup. Expect tea-like qualities, juicy stone fruits, milk chocolate and a long, sweet finish.
Muzo washing station in the Gakenke region
Rwanda Muzo comes from the Muzo washing station in the Gakenke region of northern Rwanda. Processing is handled by partner Baho Coffee, who runs the station while preserving the system and part of the autonomy of the original cooperative. Muzo Cooperative won the Cup of Excellence award in 2014, and the station has long ranked among the best-rated in local quality competitions. This lot is built around the Red Bourbon variety, which is typical for Rwanda. Combined with meticulous processing, it creates a clean, sweet flavour profile with distinct fruity layers.
Honey process
33 days of slow sun drying
- After depulping, the parchment remains covered in some of the mucilage. This helps build the sweetness, clarity of flavour and complexity of the final cup during drying.
- Cherries first undergo hand-sorting and are then separated in flotation tanks. The coffee then dries in the sun for approximately 33 days, with continuous sorting throughout the process.
- After reaching the target moisture level, the coffee rests for at least another 30 days before the final hulling.
