The de Buyer 4344.02 non-stick baking mat is an excellent replacement for baking paper. It is made of fibreglass coated with Teflon, reusable (up to 200×) and has a non-stick surface on both sides. You can trim it to the size you need. You can use the mat to bake all kinds of pastries in various shapes and sizes, which will be easy to remove after baking. It can withstand temperatures from -170°C to +260°C, is very thin (0.08mm) and therefore does not affect heat transfer. The de Buyer baking mat is not dishwasher safe, so wash it by hand only after use.
