Japan Sencha Kakegawa is a green tea from plantations located near the Japanese city of Kakegawa. This tea is one of the most sought-after types of tea and is characterized by a delicate but intense taste with a minimum of bitterness. It is the ideal choice for all those who do not like the characteristic bitter taste of green tea, but also for those who have decided to start drinking Japanese teas.

The tea plant is most suited to a warm and humid climate. You would therefore find Sencha in the open plantations of Japan, where the bush really thrives thanks to the presence of sunlight. However, you might also find it on some plantations in China, where its cultivation is not as widespread. Up to two centimetres long flat leaves slightly curled into thin needles are collected mainly by machine. However, you can still find areas where the locals practice traditional hand-picking.
Sencha tea is particularly popular in Japan because of its distinctive sweet taste, at the end of which the bitter notes are introduced in full glory, which elegantly accentuate the taste of the tea. You can flavour the yellow-green infusion with a few drops of lemon juice and sweeten it with sugar, honey or your favourite syrup, which will accentuate the sweet notes of the tea and soften the taste of the infusion.

To prepare 500 ml of infusion, use 3-4 teaspoons of good quality loose tea, then pour hot water at a temperature between 75 and 85 °C. The optimum leaching time is 2 to 4 minutes. And because the tea is more infused, you can enjoy it several times in a row. The tea can be sipped hot or cold. If you add a few ice cubes, a teaspoon of honey, a few pieces of fresh or freeze-dried strawberries and garnish the whole glass with lemon, you have a bright, refreshing iced tea.
