The dehydration procedure causes moisture to leave the food, but it keeps its full flavour and all of its minerals, vitamins and fibres. This Square Vigan Mammoth ESP1N Bronze food dehydrator has a motor integrated into its bottom, which will keep warm air flowing from the bottom upwards. Food positioned closer to the centre and on the machine's bottom trays will therefore dry out faster than what is on the outermost and topmost plates. This means that you'll need to move the trays around while drying. The manual control with the turning knob is quite intuitive, and you will be able to use it in no time.
