Amylase - ensures the conversion of starch into simpler sugars, but also the digestion of proteins and fats, is one of the most important enzymes. Protease - proteolytic enzyme that cleaves proteins. Glucoamylase - ensures the breakdown of more complex long-chain sugars into simpler sugars. Lipase - breaks down fats into glycerol and fatty acids. Lactase - breaks down milk sugar (lactase) into simpler sugars - glucose and galactose. Alpha-galactosidase - provides cleavage of oligosaccharides and fermented carbohydrates.
